Ayurveda, the ancient Indian system of medicine, emphasizes balance and harmony within the body. This Ayurvedic bowl recipe is designed to nourish and energize, providing a perfect blend of flavors and nutrients.
1 cup quinoa
2 cups water
1 cup chickpeas, cooked
1 sweet potato, diced
1 cup spinach, chopped
1 carrot, grated
1 avocado, sliced
1 tbsp coconut oil
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1 tsp ginger, grated
Salt to taste
Fresh cilantro for garnish
Lemon wedges

Cook Quinoa: Rinse the quinoa under cold water. In a pot, bring 2 cups of water to a boil, add the quinoa, and reduce to a simmer. Cook for 15 minutes until water is absorbed. Fluff with a fork.
Prepare Vegetables: In a skillet, heat coconut oil over medium heat. Add turmeric, cumin, coriander, and ginger. Stir in diced sweet potato and cook until tender.
Assemble the Bowl: In a large bowl, layer quinoa, chickpeas, cooked sweet potato, spinach, grated carrot, and avocado slices.
Season and Serve: Sprinkle with salt, garnish with fresh cilantro, and serve with lemon wedges.
