    Parents hold a secret to getting kids to eat--cut food into small shapes and place those shapes into other forms. Think of this maneuver as a culinary version of the Melissa & Doug classic shape sorting cube. The bento box is a perfect, organized receptacle that is portable for school lunches, snacks, or meals. Make this versatile recipe (sweet, savory, salty!) according to your food preferences.

    Mango Ginger Curry Ingredients

    • 1 protein (2-4 chicken breasts or 16 oz. of thick extra-firm tofu steaks)
    • 8 oz. frozen package of mango
    • 1 medium yellow onion
    • 1-2 tsp. fresh ginger root
    • 1 garlic clove  
    • 1 ½ Tbs. yellow curry powder
    • ½ tsp cinnamon
    • Red pepper flakes (optional)
    • 1 ½ cups chicken or vegetable stock
    • 1 15-oz can coconut milk
    • extra virgin olive oil
    • sea salt
    • pepper

    Optional dipping sauce: Cilantro Yogurt Sauce

    • 1 Tbs. lemon juice
    • ¼ cup fresh cilantro
    • 8 oz. plain yogurt (dairy or non-dairy)

    Optional bento box sides

    • naan flatbread
    • cooked rice (brown or white)
    • apples  

    Mango Curry DIY Bento Box Steps

    Prepare the protein in an oiled skillet, thoroughly cooked and browned. Remove the protein and cut it into cubes. Meanwhile, sauté the yellow onion in that skillet with the oil and drippings. Salt and pepper the protein and onions to taste.

    Add the cut protein back into the pan with minced garlic, grated ginger, a pinch of cinnamon, a shake of red pepper flakes, yellow curry powder, mango, and stock. Add about half the can of coconut milk. Allow it to simmer and bubble, marinating and filling your home with a yummy aroma.

    Use your imagination about arranging the options in a bento box. Serve the mango curry with naan and cilantro yogurt sauce, or the recipe with rice.

    As a side, cut an apple with a mandoline and then use a cookie cutter to create fun shapes in the apple slices. Sprinkle with lemon juice, monk fruit, and cinnamon.
